How To Use It
Soak chickpeas overnight in water with one teaspoon of Orika Chana Masala. This enhances flavour from the start, much like a traditional chana masala spice mix.
Sauté cumin seeds, onions, green chillies, and ginger-garlic paste until golden brown. Add chopped tomatoes, red chilli powder, coriander powder, and salt, and cook for five minutes. Add the soaked chickpeas along with the soaking water, then stir in two teaspoons of Orika Chana Masala.
Close the lid and pressure cook on high flame for three to four whistles until the gravy thickens. The masala is used at two stages, during soaking and in the gravy, ensuring a deeper, more layered flavour.
