Quick Recipe: Vegetable or Chicken Dum Biryani (Serves 3–4)
You will need 500g freshly chopped vegetables or chicken pieces, 1.5 cups cooked basmati rice, 1 tbsp ginger-garlic paste, 1 tbsp salt, 1 sliced fried onion, 3.5 tbsp Orika Hyderabadi Biryani Seasoning, 100ml water or curd, and 4 tsp cooking oil.
For chicken, pre-marinate with Orika Hyderabadi Biryani Seasoning for 20 minutes before cooking.
Heat oil in a pan. Add ginger-garlic paste and salt and sauté until fragrant. Add vegetables or marinated chicken and cook for 2–3 minutes. Add Orika Hyderabadi Biryani Seasoning and cook for another 3–4 minutes until aromatic. Add water or curd and cook until tender. Fold in cooked basmati rice gently and finish on dum.
Chef's Pro Tip
For an authentic dum biryani experience, seal the pan with foil, place it over a tawa, and cook on medium flame for 7 minutes followed by low flame for 15 minutes. This allows the biryani masala and rice to absorb maximum flavour and aroma.
